Overview

Introduction

Students will learn how to make delicious pies and tarts, starting with the basics of dough making and exploring different types of crusts. They will also learn how to make fruit, custard, and cream-based fillings from scratch and techniques for rolling, shaping, and topping pies and tarts. The program will cover creating stunning lattice work and decorative finishes, troubleshooting baking challenges, and exploring the science of baking. By the end of the program, students will have the skills and knowledge to create a wide variety of pies and tarts and leave with a portfolio of their own creations and the confidence to continue crafting pies and tarts on their own.

Awards

Students who achieve a minimum attendance of 75% may apply for “Attendance Certificate in Basic Patisserie (Pie & Tart)”.  Award will be issued within 3 months.

FAQs

What should I prepare on the first day?

Kindly pay the initial deposit for the course as well as prepare the following items:

  1. Chef uniform set deposit – total $392 in cash (uniform – $300, apron – $50, big towel – $30, and chef hat – $12; non refundable)
  2. Two new kitchen clothes with different colors $12 
  3. 6” cake mould – $30
  4. Cake box $12

What is your policy on make up classes?

Make-up classes are allowed but are subject to: prior approval, validity of proof of absence and availability. In addition, make-up classes do not count as attendances.
