Advanced Diploma in Hotel Culinary Management (3 Years)

Note: This program is designed for junior high graduates or F.3 graduates.

The Advanced Diploma in Hotel Culinary Management is designed to equip students who are interested in pursuing a career in the Hotel and Catering Industry with the skills needed to conduct Menu Studies, Food & Beverage Service Operations, and General Kitchen Management. Addtionally, this programme helps individuals investigate global, regional and local perspectives on Hotel Culinary Arts Management as well as enhances their skills and knowledge with practical kitchen experience.


Note: All courses that are italicized and underlined are practical classes conducted under a professional kitchen setting.

Entry Requirements

F.3 graduate or above, or other candidates with combined equivalent education and training experience (Interview required.)

English Tutors

Applicants who are experiencing difficulty with the English course material can avail of the school’s team of professional European and American tutors.


To obtain the Advanced Diploma in Hotel Culinary Management from the Academy, students must fulfill the following requirements:

  • Achieve 90% attendance or above in each Module
  • All modules combined must achieve 50% or above in average (does not include the industrial training)

Further Studies

Students who have graduated from this course can apply to complete their final year in a degree program in the following institutions:

Tuition Fee

  • For 3 years: HK$190,900
    • Year 1: 
      • 1st instalment: $8,300 (registration fee, non-refundable)
      • 2nd, 3rd and 4th instalments: $24,900 each (settled in the end of September, December and March)
    • Year 2:
      • 1st instalment: $8,300 (registration fee, settled before the end of Year 1, non-refundable)
      • 2nd and 3rd instalments: $24,900 each (settled in the end of September and December)
    • Year 3:
      • 1st instalment: $8,300 (registration fee, settled before the end of Year 2, non-refundable)
      • 2nd instalments: $24,900 each (settled in the end of September)
      • 3rd instalment: $16,600 each (settled in the end of December)
  • Miscellaneous Fees:
    • Year 1: ​
      • HK$4,000 (Includes Chef Uniform x 2, Apron x 1, Plaid Pants x 1, 1 set of Cutlery & Utensils, Insurance, Notes, Recipes & Ingredients)
    • Year 2: ​
      • HK$4,000 (Includes Registration, Notes, Ingredients, Food to take home, Insurance)
    • Year 3: ​
      • HK$4,000 (Includes Registration, Notes, Ingredients, Food to take home, Insurance)

Scholarship Policy

In order to help youngsters further their education and pursue a professional career, Hong Kong Youth Care Association offers scholarships of up to $49,800* to Advanced Diploma in Hotel Culinary Management (2 & 3 Years) students. Scholarships are awarded based upon below criteria:

  • Apply successfully before 31st May every year.
  • Obtain IELTS 4.5 or above (before 31st Aug 2021) or
    by HKCA English Assessment (Passing Mark: 50%)
  • Complete 200 hours voluntary work:
    • Assist the teacher in the interest classes including clean up sink, utensils and etc.
    • Perform store operations
    • Other duties as assigned by the Academy
  • Attend the graduation ceremony
  • Achieve 90% attendance or above in year 1
  • 1 recommendation from chef teachers

Qualified students will receive the scholarship in year 2.

* Subject to the availability funding from the Hotel & Culinary Industry and the number of successful candidates.
